Cinnamon Sweet Potato Quino Salad

I know the name is a mouthful but it is delish…

Ingredients:

Baked sweet potato – 0.5 lg
Chopped Mushrooms – 1.5 cups
Raisins – 2 tbsp
Chopped Walnuts – 2 tbsp
Cinnamon – 2 tsp
Quinoa – 3/4 cup cooked
Edamame – 0.5 cup
Olive oil – 1 tbsp
