Turnip Soup

It’s been another cold and rainy day here in Houston.  While at lunch the cafe we were eating at gave us a large organic white radish, which I thought would go greatly with some turnip for a soup.    In case you are wondering; Turnips are a “starch” vegetable, but provide only one third the amount of calories as an equal amount of potatoes.   Turnips provide an excellent source of vitamin C, fiber, folic acid, manganese, pantothenic acid, and copper.  They also offer a very good source of thiamine, potassium, niacin, and magnesium.  In addition, they are a good source of vitamin B6 and E, folic acid, and riboflavin.

Turnip greens are more nutrition dense than the root.  The greens provide an excellent source of vitamins A, B6, C, E, folic acid, calcium, copper, fiber, and manganese.  I saved the greens for tomorrow morning’s green juice :) .   To learn more about benefits of these vitamins see Do you know your vitamins and minerals?

Ingredients:

  • Vegetable broth – 8 cups
  • Turnip – 2 large
  • White Radish – 1 large
  • Zucchini – 4 baby
  • Squash – 2 baby
  • Portabella Mushrooms - 5  small caps
  • Onion – 0.5
  • Carrot – 1 med
  • Red Bell Pepper – 0.5
  • Tomato – 2
  • Celery – 3 stalk
  • Garlic - 6 cloves
  • Lentil* – 0.5 cup
  • Juice of 1 fresh lime
  • Chili powder – a dash
  • Turmeric – a dash
  • Cumin – a dash
  • Salt and pepper to taste
  • Olive Oil – 1 tbsp

* Vitamin C helps absorption of Iron, so I decided to add some lentil to the soup.

Cooking Directions:

  • Soak lentils in water for at least 30 min
  • Saute chopped onion and garlic in olive oil until translucent
  • Add 2 cups of Vegetable broth
  • Drain lentils and add to the broth and let it cook on med heat for few  min
  • Add finely chopped turnips, 2 cups of broth and allow it to cook with the lentils on low heat while chopping other vegetables
  • Add all other vegetables finely chopped, turmeric, chili powder, cumin, lime juice, salt and pepper  to the soup and let everything cook on slow heat for 45 – 60  minutes

This yields 6 servings, 1 serving = 2 cups
