Ingredients:
- Onion – 1/4
- Garlic – 4 cloves
- Tomato – 2
- Spinach – 1 cup chopped
- Leek – 2 bulbs
- Capers – 1 tsp
- Parmesan Cheese – 1 tbsp
- Penne Pasta – 1.5 cup (dry)
- Jalapeño – 0.5 (optional)
- Olive oil
- Yellow Squash
- Zucchini
- Tomato sauce – 8 oz can
Cooking Direction:
- Cut Zucchini in quarters and salt while prepping other ingredients

- Wipe salt from the zucchini and place on a sprayed baking sheet

- Place zucchini in preheated oven at 500° under broil


- Chop onion, tomato, leek bulb and garlic.

- Saute onion and garlic in olive oil
- Add tomato and cook for a couple of minutes
- Add leeks and cook for a minute longer

- Add tomato sauce and let simmer
- In a separate pot bring water to boil, add pasta and cook until al dente
- Place penne in plate, add sauce top with capers and parmesan cheese
- Add broiled zucchini and squash on the side
