I have had a busy day, which I love. I like getting into work and be super busy this way the next thing I know it is time to go home…
I have to admit though that my eyes hurt, I read over 10 different documents and looks at a bunch of specifications and drawings to see how we can optimize the exciting offshore site that we might be working on.

As far as my stomach goes I am doing better today. I am not 100% back to normal, but about halfway there. The Dr yesterday reminded me of Probiotics which I had forgotten about. I took one with each meal today and amazingly it has calm down my stomach a bit.
What are PROBIOTICS?
Probiotics are live microorganisms (in most cases, bacteria) that are similar to beneficial microorganisms found in the human stomach. They are also called “friendly bacteria” or “good bacteria.” You can take them in the form of pill. I like the Udo’s Choice brand. You can read more about probiotics and its potential benefits here.

I finally got around to posting my Vegan HOLIDAY DRESSING recipe and write my YOGACHIPS review. I got the Holiday Dressing reicpe from my MFD friend Jessica and made it for the very first time on Thanksgiving. I absolutly loved the flavors and the smell of rosemary and thyme… I plan on making it again for Christmas and am hoping my in-laws will love it as much as I do.
I skipped the gym today, again, Wednesday was the only day this week that I went simply because I couldn’t think about missing spinning. I really needed the extra sleep, I got 9 hours last night which was GREAT. I made green juice for breakfast this morning and drank it on the drive to work, since I was running late.
I had a pear, kiwi and Clementine for my AM snack.

I really enjoy my kiwi with its skin on it. I just bite into it like I would to an apple or pear… how about you? Do you peel your kiwi?
For lunch I had two slices of Ezekiel bread, 1.5 tbsp of Almond butter and 0.5 tbsp Quince jam;

Have you ever tried Quince? Quince is a good source of Vitamin C, Fiber and Riboflavin
I had a late snack, at about 4 pm, of a serving (2 cups) of Lentil & Veggie Soup, a perfect choice for an always freezing office. I didn’t have my camera with me today so no picture of the soup.
The drive home took me a little bit over an hour today. There was a car on fire on the interstate so the whole hour I thought about what I would make for dinner… that’s when Cinnamon Sweet Potato-Quinoa Salad was born.

I came up with this recipe because I had a baked sweet potato in the fridge and just started adding everything else that thought would go well with sweet potato… the edamame was a last minute addition to add protein to my dinner. The flavors really worked well together and the texture was perfect. I loved the soft saute mushroom mixed with crunchy walnuts and edamame and sweet potato and raisin. To me it was a perfect comfort meal.
I liked it so much that I am entering this recipe for Corinne’s GGB Nutrition Challenge!
I also had some zucchini fries with it… just because I LOVE zucchini fries

When I was in India for 6 months with tons of tummy issues, my mom sent me Probiotics and they helped SOOO much. Glad you thought of them and are getting some relief. Also, have you ever tried Charcoal Pills? Sounds weird, but they are all natural and excellent for gas!

Regarding the probiotics, I use Kefir (fermented milk product) for my probiotics. The plain kefir is really good with some sweetener and unsweetened cocoa powder!

My mom is queen of fruits… she is a healthy eater and is always turning everything into a jam. Most of my jams are made by her and most of the fruits are from her back yard
